Salad
- 6 cups baby spinach (or spinach and arugula blend)
- 16 ounces fresh strawberries, sliced
- 1 cup fresh peaches, skinned and diced
- 1/3 small red onion, sliced very thin and soaked in cold water
- 4 ounces Feta or goat cheese, crumbled
- 1/2 cup toasted pecans, roughly chopped
- 1/2 cup poppy seed salad dressing (store bought or try our recipe below)
Poppy Seed Dressing
- 1 cup extra virgin olive oil
- 1/2 cup raspberry vinegar
- 1/4 cup honey
- 1 tablespoon poppy seeds
- 1 teaspoon Dijon mustard
- 1 teaspoon salt
